
My husband is a GREAT cook. After yet another amazing meal that he prepared for dinner, I felt the urge to share the recipe. This shepherd’s pie was SO delicious – I don’t know what took me so long to realize how much I like this dish. Maybe because I’d never had it like this! He used a cast iron skillet to cook the beef and vegetables and then added the potatoes to bake the entire pie in the skillet. Here’s the recipe that my husband used for this shepherd’s pie:
Ingredients:
Meat Mixture:
1 tbsp olive oil
1 lb ground beef
½ tsp kosher salt (or to taste)
½ tsp freshly cracked pepper (or to taste)
1 tsp onion powder
1 clove garlic (minced)
2 tbsp Worcestershire sauce
1 cup beef broth
½ cup chopped carrots
½ cup corn
Mashed Potatoes:
3 large Russet potatoes, peeled & cut into cubes
2 tbsp butter
1 tbsp milk
⅓ cup shredded sharp cheddar cheese
½ tsp kosher salt (or to taste)
½ tbsp parsley
Instructions:
- Boil the potatoes – begin by cooking the potatoes in boiling water for about 20 minutes. Prepare the meat mixture while the potatoes are cooking.
- Prepare the meat mixture – heat the olive oil in a large cast iron skillet over medium heat. Add the ground beef and cook 5-10 minutes, until no longer pink. Break up beef while cooking.
- Add the onion powder and garlic and allow to cook for 2-3 minutes. Then add the Worcestershire sauce and beef broth and stir. Add the carrots and corn and cook for 2-3 more minutes, then remove from heat and set aside.
- Preheat the oven to 350 F.
- Prepare the mashed potatoes – drain the potatoes, then put them in a large bowl. Add 1 tbsp of butter and mix on high for 2 minutes or until creamy. Then, add 1 tbsp of milk, another tbsp of butter, and cheese and continue mixing on high for another 2 minutes.
- Assemble shepherd’s pie – add the mashed potatoes on top of the meat mixture in the skillet, smoothing with a spatula and adding peaks if desired. Garnish with parsley.
- Bake – place the skillet on the top rack in the oven. Place a baking sheet on the bottom rack to catch any liquid from the skillet. Bake for 40-45 minutes, until potatoes become golden brown.
